Henri IV was the most popular king of FRANCE
For 4 or 5 peoples
Have 200g mince, 3 egg yolks, 150g finely chopped chicken liver,
1 bouquet garni, 2 cloves, 1 fattened pullet approx. 1kg,
1 pig's trotter, 2 marrow bones, 1 bayleaf, 3 leeks,
3 large carrots, 6 turnips, 150g celeriac, 5 shallots,
1/2 cauliflower, 1/2 white cabbage, 4 potatoes,
chopped herbs, 1 sprig of thyme,
salt and pepper.
Mix the minced meat and chicken livers with the egg yolks
and flavour with thyme, season with salt and pepper.
Knead well and form into a ball.
Use to stuff the chicken, closing the opening carefully.
Place the chicken, pig's trotter and bones in stewpan and add
water to cover.
Bring to the boil and skim from time to time.
Then add the bouquet garni, bayleaf and cloves.
Season with salt and pepper.
Cook for 1h30 skimming occasionaly.
Meanwhile, clean, wash and roughly chop all
the vegetables.
Add to the pan and slowly bring the boil.
Simmer for 30 mins.
Remove the meat and the vegetables.
Cut the chicken into large pieces
and slice the stuffing.
Sieve the stock, add the chopped herbs
and pour over the vegetables.
Serve the hot,
with the chicken and stuffing separately.
